As I non-baker, I scoffed at this at first. I certainly couldn’t be bothered with baking. But then, in week four of lockdown, and bored of the walnut loaf I’d been buying from the supermarket over the past few weeks, I caved. Boozy banana bread
I became a quarantine cliche this weekend when 1) I cut my boyfriend’s hair 2) had a Houseparty call with my friends and 3) baked a banana loaf. It was quite an achievement, and not just because flour is so hard to find right now. No, the reason it’s an achievement is because I never bake, like, ever. However, the recipe I followed (Nigella Lawson’s) was ridiculously simple it’s pretty much idiot proof. It had the added bonus of being boozy, with rum-soaked sultanas as one of the ingredients. I’ll be enjoying slices of it with slathers of butter for the rest of the week – it could be a new thing for me!
I’m a huge fan of overnight oats because they’re even quicker to prepare than my usual porridge . I use a variant of the Body Coach recipe for mine, which is a ripe banana, chocolate protein powder (you can order this on Amazon) and milk – I use oat or soya milk but any milk is fine. You then add in the oats and leave it to soak overnight. My secret hack is to add a grated apple to the mix and stir it through before it goes in the fridge which adds a bit of juicy crunch. You’ll want to make this again and again!
French toast with nut butter and banana
This is a recipe by Alice Liveing, who is another fitness influencer I’m a fan of. It’s pretty indulgent but it’s worth it as a treat. However, you don’t have to go for the French toast if that feels like too much effort – you can go for no-frills peanut butter and banana on toast, which is just as good. But the big question is this: are you a smooth or a crunchy peanut butter fan? I’m crunchy all the way!
I like smoothies and I consider a banana a non-negotiable item, otherwise they’re too watery and you get hungry after an hour. You need to make sure you’re starting your day with something that will fill you up, right? I make mine with one ripe banana, milk, chocolate protein powder and then whatever fruit I have in the fridge – my personal favourite is raspberries because they turn it such a gorgeous colour. You could even add a bit of spinach if you wanted to get some leafy greens in – the sweetness of the banana (as long as it’s ripe) means that you can’t taste it, trust me!
My mother was talking to me about this on the phone today. I don’t know if it’s the circumstances we find ourselves in right now but I feel like I’m really craving stodgy cupboard staples such as rice pudding and custard. Anyone else? I was even after a tin of condensed milk the other day so that I could make fudge! This dessert is as simple as it gets – heat up your custard and then mix in some sliced banana and voila – heaven! You can even crumble in some chocolate if you want to be a bit extra.
